One has to be careful with an ordinal scale in the conclusions drawn.  Indeed, one could make the case for saying "none of the above," since the mean and variance calculated from an ordinal scale is not interval or ratio based.
Let me assume this is not too var from interval.
Plastic surgeons are more flexible but more variable in their flexibility than trauma surgeons.
That would make trauma surgeons's agreeing with each other about level of flexibility the best answer.  This can't be extrapolated to all medical professionals.
