If I drop a soccer ball. The first bounce will be highest, and each bounce after that will be lower until the ball stops bouncing.
How can I describe the energy changes that takes place and explain how energy is conserved?

The ball before you drop it has potential energy.
You drop it.
When it hits the ground energy is expended in stretching the ball 
and in friction with the ground.

The compressed ball then has kinetic energy which causes it to
rebound, but to a lesser height than the original because of the
energy expended in the stretching and the friction.
