Find the axis of symmetry using the formula: x = -b/(2a)
In your equation a = 1; b = 6, so we have:

x = -6/(2*-1)
x = -6/-2
x = +3 is where the axis of symmetry occurs

To plot the graph, make table, choose x values below and above the axis of symmetry. Let say from -1 to +7,

Here's x = -1 as an example: substitute -1 for x in the original equation to find the value of y
-(-1^2) + 6(-1) - 2 = y
-1 - 6 - 2 = -9 is the value of y, I put it in the table

Do the same with the other values of x. Make a table like this
