No, not if it's contained.
The volume will increase and be more than 5 gallons, and the density will decrease.

The weight/mass will not change, but the density and thus the volume will.
In the peculiar case of water, the solid state (ice) is less dense than the liquid, thus the density will decrease and the volume will increase after freezing.
If the 5 gallons of water is in a tightly closed container, it may burst, like so many water bottles or soda cans
