Because 180 degrees is equal to pi radians, by definition.

Technically speaking, it is not equal to 1, because radian is not a dimension, or a metric (like meter, inch, kg, pound, etc.), but degree is. (Radians tell you how many radii you can fit around the circumference, or circular arc.) The quantity 180%5E0%2Fpi, or pi%2F180%5E0 should only be used in the context of converting one form of angle to another form.
