Graphing is fine if you want a quick estimate of the solution - but unless the solutions are integers or easily plotted rational numbers, graphing only gives an estimate. Substitution is good if one of the equations can easily be solved for one variable in terms of the other. Elimination is always good, especially if graphing is not accurate enough or if both of the equations are complicated.
