(8 quarts)*(1 gallon)/(4 quarts)=2 gallons.
Note that by multiplying 8 quarts by (1 gallon)/(4 quarts), we are just multiplying by 1. However, the "quarts" units cancel leaving only gallons.

Put 8qt over 1

Now we use 1gal=4qt to make a unit fraction, that is,
one which equals 1.  We have to choose which of these unit 
fractions we need to multiply by.  Our choices are the unit
fractions %28%281gal%29%2F%284qt%29%29 and %28%284qt%29%2F%281gal%29%29.  We will choose the one with qt 
on the bottom to multiply by, so that it will cancel 
with the qt in the numerator. So we multiply by %28%281gal%29%2F%284qt%29%29

%28%288qt%29%2F1%29%28%281gal%29%2F%284qt%29%29

Now we cancel the qt's:

We can also cancel the 4 into the 8 and get 2
