Presumably you are adding these in their vertical columns. In the first column you have
+2x and -x. (The minus x can be thought of as -1x so the problem is +2x + (-1x) and adding
+2 and -1 results in +1. So the result of adding 2x and -x is +1x which we write as just +x)

Next go to the other column in which you have -1 and you add to it +1. The two numbers are
the same, but they have opposite signs. Therefore, when you add them, they cancel each other out
or if you prefer, they add to zero. So the answer you get by adding the two columns is:

+x + 0

and the answer would be written as just x since the plus sign is understood and the zero need
not be shown.
