Stratified sampling is where you break the population into non-overlapping groups.
Then you select members from each group according to their respective sizes.
For instance, if there are twice as many women compared to men, then your sample could have say 20 women and 10 men. Or another possible sample could be 30 women and 15 men. The goal is to have a ratio of 2:1 of women to men.
Selecting the sample according to this ratio ensures there's more proper representation from each group. No group is left out. Also, no group is either over-represented or under-represented.
