A little confusing question--I am assuming the proportion of fat in a diet of 2000 calories is 65 gms (520 cal), not that a 2000 calorie diet is right for her or the obvious answer of yes, if she should be consuming only 65 grams of fat.
so 65/2000=x/2500
2000x=162500
x=81.25 gm
No, given the proportion of fat to 2000 cal, she is not consuming a higher ratio or percentage of fat at 2500 cal if she is consuming 75 gm.

Set Up Proportion:  Cross Multiply to Solve

   65%2F2000+=+x%2F2500  ⇒  x = 65(2500)/2000) = 81.25 grams

  75 grams < 81.25 grams, she is not consuming too much fat
