You can choose whatever is convenient.
I would choose x-2, x and x+2 because the sum is 3x, if you're asked to find the numbers. Less work to do that way, but any 3 that you choose give the same answer.

Just finding 3 consecutive odd numbers, tho, is a bit different.
To be sure they're odd, use 2n+1, where n is any integer.
Then it's 2n+1, 2n+3 and 2n+5.

2n-1, 2n+1 and 2n+3 would also work, tho, but 2n-1 might be negative.
