I tried 8x7x6x5x4x3x2 which equals 40320. then I tried 7x6x5x4x3x2 which equals 5040.

You are working with combinations so you must use nCr.
r=2 because there are 2 socks for every pair.
and then i did trial and error on calculator and got
85C2 = 3570
Answer: 85 socks
