I would say that in 12 weeks they will drink 3 times as much milk, which is a total of 8*3= 24 gallons. This is 16 MORE gallons than they did in 4 weeks.

In 4 weeks the family drinks 8 gallons of milk
In 12 weeks they will drink ?
This is direct proportion
12 * 8/4
= 24 liters
They will drink 24 - 8 = 16 gallons more
