Target is 40% mushrooms. His current ingredients would yield 19%2F%2819%2B12%29=0.6129 fraction as mushrooms. We can use the expression and adjust the target to 0.40 and apply a variable to SUBTRACT from the mushroom quantity of 19.

Let's say, Andrew would use 19-w ounces of mushrooms.
%2819-w%29%2F%28%2819-w%29%2B12%29=0.40
Solve for w, and then compute 19-w.

You may find another way to solve this problem. My solution described is not necessarily the only way.

M + 0(12) = .4(M + 12)

M = .4m + 4.8

M - .4M = 4.8

.6M = 4.8

M, or quantity of mushrooms to be used = 4.8%2F.6, or highlight_green%288%29 oz.
