There is no mathematics in this or any other similar problem.
Many different logical rules will produce this set of first numbers in the sequence; but those different rules will very likely produce different next numbers.
Technically, the answers to the two questions are these:
Question: What would be the next number? Answer: Any number you want.
Question: Why? Answer: Because any next number makes a valid sequence.
The only way to KNOW the CORRECT answers to any problem like this is to ask the author of the problem what the answers are.

1+2=3
2+3=5
5+8=13
8+13=21
Not any apparent pattern
1-0=1;
2-1=1;
3-2=1
5-3=2;
8-5=3;
13-8=5;
18-13=5;
No pattern
Pick any counting number you want as long as it is bigger than 18. No pattern.

It was just explained one thousand million times at this forum, that
all questions of this type are not Mathematical and have no any relation/relations to Math.
With such questions, go to Fortune Tellers.
Their method of solution is to take the money (your money, naturally).
In response, they will call/name you any arbitrary number.
If you will ask them "Why ?", they will refer to special location/disposition of stars and/or planets in the sky,
and will request additional money.
