Two segments connected end to end do not close a figure, so it is not a polygon.
It may be called a polygonal line, or a polygonal chain, or function, or
something,
but that would be open to debate.
If the segments are connected end to end and are not colinear,
as in
you can connect the free ends with another segment
to make a polygon called a triangle,
but the two segments by themselves cannot form a polygon.
