I think f is just a hold over from "function of x".
It's just easier to write f(x) instead of function of x.
Usually people try to be more descriptive such as the height of water in a tank might be h(x) or the pressure in the cylinder might be p(z), so that you can connect the mathematical model with what's going on physically.
