Let x = amount of water to be evaporated

The equation will be
Amount of sugar beginning - Amt sugar evap = Amt sugar at the end
10 gallons * 12% - 0 sugar evaporates = (10-x)gallons * 15%
.12(10)-0 = .15(10-x)

Multiply both sides by 100 to clear the decimals:
12*10 = 15(10-x)
120 = 150-15x
-30 = -15x
x= 2 gallons to evaporate

Check:
Amount of sugar before =10*.12 = 1.2 pounds
Amount of sugar after = 8*.15 =1.2 pounds
