Ambiguous....
To me, the wording "...between Wednesday and Monday..." suggests between Wednesday and the FOLLOWING Monday.
That would make 5 days of growth, for 100 inches.
Since 40 inches is an answer choice and 100 inches is not, I would say that the problem is poorly worded.

When Wednesday and when on Monday? Which Monday? The one on which the growth begins, or the one seven days from the one on which growth begins?
Ignoring the exact hours, Wednesday to Monday is 5 days change.
