Chemical change! This turning into a solid when the egg is heated, is not reversible. Heating the egg is not like heating ice which becomes liquid water and being able to be refrozen again. The egg contains several proteins with functional sites that can participate in cross-link bonding. Those bonds will not simply become undone if the egg is later allowed/forced to cool.
