When you go through mud on a bicycle, does the mud sling out or up from the back?

"Sling" implies movement due to rotation.
Anything slung will be in the plane of the thing rotating, in this case the wheels.
The mud will move away from the center of the wheels in the plane of the wheels. That might be up, or down, or horizontal.
