If you want the height in inches, convert capacity to cubic inches.
189 gal * 1 gal/7.48 cf --> 189/7.48 cubic ft.

1 cf = 12*12*12 = 1728 cubic inches.
Capacity = (189/7.48)*1728 cu inches.

Ht = (189/7.48)*1728/168
