Let n be the amount of 8% vinegar. Then:
.08n+.05(240-n)=.07(240)
.03n+12=16.8
.03n=4.8
n=160
The chef needs 160ml of 8% vinegar and 80ml of 5% vinegar for her dressing. ☺☺☺☺
