A chef has containers of heavy cream that are 40% butterfat and light cream that are 20% butterfat. How much heavy cream must be added to a 1000 ml container of light cream to produce a mixture that is 36% butterfat?
-----
fat + fat = fat
0.40x + 0.20*1000 = 0.36(x+1000)
Multiply thru by 100 to get:
40x + 200 = 36x + 36000
4x = 35800
x = 8950 ml (amt. of 40% butterfat needed for the mixture)
