Let x be the number of pounds of peanuts.
simplify
subtract 2.50x from each side, you get

subtract 48 from each side

divide both sides by 1.5
So you need 6 pounds of peanuts.

peanuts worth $2.50 per pound x lbs
cashews worth $4.75 per pound 12 lbs.
Mixture worth $4 per pound, (x+12) lbs

2.5x+4.75*12=4(x+12)
2.5x+57=4x+48
4x-2.5x=57-48
1.5x=9
x=9/1.5
x=6 lbs of peanuts
