Are you sure it was not 5.1% dietary fiber by mass?
Oat bran contains 14 g dietary fiber per 94 g cup of bran,
and that is 14.9%.
I do not think any edible muffin in the world could contain much more than 5% fiber.
Maybe a fake one (for display only), made with glue and sawdust.

A real life bran muffin may have 5 g fiber.
A small serving of beans (or even chili with beans) will have as much fiber,
more protein, and less total calories.
