f(x) = sqrt {x-1}
The domain is all values that x can take on.
I'll set the insides greater-than-or-equal-to zero, and solve. The result will be my domain.

x - 1 ≥ 0

Adding 1 to both sides of the inequality, I get:
x ≥ 1

The domain is "all x ≥ 1."
