The last one is by far the best interpretation.
CI are about parameters, not samples. The value in the sample you know. We don't use "chance" but rather confidence.
The first one uses confidence, but a randomly selected student either does or doesn't take notes and that is a dichotomous 0/1 probability, not an interval.
