f(x) = 7x - 5x^2
I tried:
x(7-5x)
-x(5x-7)
Or:
-5x^2 + 7x

Now I'm lost!

There are many ways to do this and you should do it with the tools
you are currently studying.
One way to attack the problem is to find the x-intercepts.
Let y=0, then 7x-5x^2 = 0
x(7-5x)=0
x=0 and x=7/5 are the x-intercepts.
The axis of symmetry is half way between these values.
So axis of symmetry is x=7/10.
You can find the vertex by finding the y value when x=7/10.
