In the first case, notice that the parentheses are outside the exponent. This means that the 3 exponent just inside the parentheses applies ONLY to the y. You do NOT cube anything else. Your answer is not correct.
If the problem had been written:
with the parentheses on the INSIDE of the exponent, then you would be correct to say:

The expression cannot be simplified.
I'm not sure what you tried to do in the second one. This is correct, if I've interpreted your problem correctly.
