There are 15 possible selection for the first of the e item meal. After 1 of the 15 items is selected there are 14 items available from which to select the second pf the e items. Similarily the are 13 items available for the third meal item. So 15*14*13=2730 is the number of 3 item meals available from the 15 available items.
