Remember that a percentage is simply a fraction out of a hundred. For example, 50% is the fraction (ie there are 50 cases out of 100).
In this case, the figure 21% (the percentage for those who chose Chinese restaurants) can be represented as the fraction . It turns out that if you multiply that fraction by the total amount of people (which for now we'll call 'x'), we'll get those 126 students. In other words,
Start with the given equation.
Multiply both sides by 100.
Multiply and simplify
Divide both sides by 21 to isolate 'x'.
