How many lbs. of whole milk and cream should be mixed to form 200lbs for cream cheese. whole milk= 4% milk fat, milk for cream cheese = 8 % milk fat and cream =30% milk fat.
------------
Whole milk DATA:
Amt = x lbs ; Amt of fat = 0.04x lbs
---------------
Cream DATA:
Amt = 200-x lbs ; Amt of fat = 0.30(200-x)=60-0.3x lbs
---------------
Cream Chees DATA:
Amt = 200 lbs ; Amt of fat = 0.08(200)= 16 lbs
------------------\
EQUATION:
fat + fat = fat
0.04x + 60-0.30x = 16
-0.26x = -44
x=169.23 lbs (Amt of Whole Mild)
200-x=30.77 lbs (Amt of Cream)
-----------------
