it just doesnt look right

You can do it with only one unknown, which is what you need when there is only
one equation. I prefer x, to avoid confusion:

Let x = lettuce
Then 2x = tomato
:
x + 2x = 12
3x = 12
:
x = 4 L.s and 8 T's
