Change in distance divided by change in time is a slope called speed. The axes of the graph would be distance and time. Good to know when driving a car.

Change in speed divided by change in time is a slope called acceleration. The axes of the graph would be speed and time. Good to know when designing a car.

Change in height over change in time for a plant might be called growth rate. The axes of the graph would be height and time. Good to know if you are a farmer.

Change in population over change in time is rate of population growth. Good to know for many reasons. How much food you will need in the future is driven by population growth.
