When you FOIL it will be
x^2 - 5x - x + 5, (essentially the same as you had)
then combining the middle terms
x=-2
y = 21
vertex=(-2,21)
This is not the vertex, just an ordered pair

To find the vertex, find the axis of symmetry, x = -b/(2a); b=-6; a=1

x = 3 is the axis of symmetry
Find the value of y using x=3
y = 3^2 - 6(3) + 5
y = 9 - 18 + 5
