You graph the boundary, which is always an equality.

Rearrange:
y < -x + 3

Graph the boundary line y = -x+3 as a dashed line.

Select at test point, such as (0,0) and test it
in the inequality:
0 < 0+3
That is correct and means (0,0) is in the solution set
of the inequality.

Shade the area below the boundary line which does include (0,0)

That shaded area is the graph of your inequality.
