Change it to equal:
x + y = 1
Graph that, and you get a line with a slope of -1. The line passes thru (0,1) and (1,0).
The area to the lower left of the line is <, that is, the sum of x and y is less than 1.

They way I do these is plot the line
Then shade in the area "less than" that line (below it)
