fog(x) means f(g(x)). The "o" in better notation would be a smaller sized "o" written at mid-level between the f and the g. The variable just means use g(x) as the input for f(x), and simplify the resulting expression.

fog(x) means f of g(x), of f(g(x)), and since g(x) = 2x - 7, then f(g(x))) = f(2x - 7)
f(x) = 5x, so
f(2x - 7) = 5(2x - 7)
