A. Find the rate of change between the two stated values for x: 1 and 2

That is the slope between x = 1 and x = 2:
f(1) = 1-1 =0 ; f(2) = 8-2 = 6

slope = (6-0)/(2-1) = 6

You know m = 6 and y = 0 when x = 1
