 Two less than a number: x - 2
Three more than twice the number: 2x + 3
The product is the result of a multiplication, so just multiply those two expressions.  You can just show the two of them multiplied by putting them in parentheses, or you can multiply it out using FOIL.  Ask your instructor what s/he expects.
