Because "plus a negative number" always means the same as "minus the corresponding positive number, and it is shorter to write A-B than to write A+(-B) What you should learn to do is to pretend that a minus sign IS a negative sign! Pretend that it is the sign of the number that follows it. After all, a negative sign and a minus sign look exactly alike. So when you see A-B learn to think of the - before the B as if it were actually the negative sign of B, (even though it really isn't.) But think of it that way anyway.
