It depends.
The mode is used as a descriptor when there are a large number of similar items in a population. Otherwise, with small differences the mode is not usually helpful.
The median is used when there are extreme values and one wants to define a center. If you look at salaries in a company, the median is a better descriptor of a center than the average, which is affected more by one extreme value. The median is not.
The average is used when the population is fairly symmetrical and has certain mathematical advantages to it that the median does not have.
typical number of pages? Probably the average, since no reason to think the population isn't somewhat symmetrical. If there is reason to believe it is asymmetrical then use the median.
